I know that eating oatmeal with help with milk supply, but I'm not a cereal eater, let alone a hot cereal eater (can't drink milk). Would oatmeal cookies be a good substitute?

Yes, you can definitely eat oatmeal cookies instead! I have done that myself. It doesn't matter what form the oatmeal is in, just as long as you are eating it.
